Spicy Thai Pasta Salad That’s Bold, Fresh, and Surprisingly Easy

The spicy Thai pasta salad is one of such food, which make one sense an journey with out complexity. It is colorful, it is highly spiced, creamy due to the peanut dressing, and it is loaded with fresh crunch. This type of dish is ideal when you have busy family days or need to prepare meals or even on casual dinner times when you are not interested in having heavy meals but something with a good taste. The sweet, tangy and spicy taste is what makes it unlike the pasta salads traditionally but easy enough to cook or prepare every day.

Cooking the Pasta Properly

Begin with kind of a dozen oz. Of pasta (rotini or penne) that is cooked till al dente. Pasta cooked too long will become soft when mixed with dressing, consequently it must be company.  Once emptied, run it under some cold water to ensure that it does not continue cooking and to bring the temperature down to zero. This makes the texture non-sticky.

Making the Peanut Dressing

Whisk together in a bowl creamy peanut butter, soy sauce, rice vinegar, fresh lime juice (a small smidge of honey), grated ginger, minced garlic and sriracha. Whisk until smooth. Should it be too thick, gradually pour warm water until it gets to be creamy and easily pourable. Add spices to flavor and stir.

Preparing the Vegetables

Slice red bell pepper and shred carrots, slice green onions and thinly slice or shred purple cabbage. You also add cilantro, which of course gives it freshness too. These are the vegetables that bring color, crunch and a welcome respite from all of those creamy peanutty flavors.

Combining Everything

Add the ready vegetables to the pasta which is cooled and mix them in a large bowl. Add the dressing to the mixture and mix lightly until it is all evenly covered. The idea is to sprinkle the pasta and not to submerge it in the sauce.

Adding Texture

Add a little light roasting to peanuts, which are crushed. This little addition creates a significant difference in the texture and the total flavor.

Making It More Filling

To make this a full course meal, you may include grilled chicken or baked tofu. Both of them are natural combinations with the peanut dressing and complete the satisfaction of the salad.

Letting the Flavors Settle

Put the salad inside the refrigerator and go away it for at least thirty minutes before serving. This is a length in which the flavors are allowed to combine and mature. It is even more delicious when it is chilled.

Refreshing Before Serving

When cool, toss salad lightly. If it is a bit dry, wait until you’re ready to serve and squeeze some lime juice or add a spoonful of extra dressing to brighten up the texture.

Storing Leftovers

Keep any remaining food in a non permeable container in the refrigerator and it lasts up to three days. It is a great next-day flavor as it keeps on developing the tastes.

Keeping It Flexible

This recipe is easy to adjust. Cucumber can be added to add freshness, edamame adds protein and even mango slices can be added to add sweetness. The spice content can be changed according to the taste of your family.
